Frequently asked questions about our truffles and traditional chocolates.

Q: Can I make a custom box of chocolates?
A: Unfortunately, we cannot offer a custom box of chocolates on capitalconfections.com. However, please visit our store at Town & Country Village or call us at (916) 973-0249 to place a custom order. In our store there are many custom boxes available. We can offer some of those items over the phone.

Q: Where are the truffles made?
A: All of our truffles are handcrafted, hand-decorated and hand-packaged in our kitchen in Sacramento, California.

Q: Can you send me a catalog?
A: Not at this time, but we will keep updating the website to keep you informed of all our products.

Q: What is the shelf life of your products?
A: We handcraft our chocolates using only the finest and freshest all-natural ingredients without artificial preservatives. Shelf life can vary depending on the product. Factors that impact shelf life are the amount of cocoa butter in the product, the specific ingredients of the product, the temperature and humidity where the chocolate is shipped and stored, and the exposure to light where the chocolate is stored.

Q: How should I store my chocolates? Can I refrigerate them?
A: Do not refrigerate your chocolate. Always store chocolate in a cool, dry location away from a heat source and direct light. The ideal storage environment should maintain a consistent temperature between 60 and 70 degrees Fahrenheit. If stored in temperatures higher than that, the chocolate may begin to soften, affecting the appearance and flavor of the chocolate. Do not freeze or refrigerate chocolate. Ideal humidity for chocolate is 55%, and regular refrigeration units are too humid and will cause condensation. Keep chocolate away from sources of strong odors as chocolate absorbs the odors of food and other strong-smelling products around them, which can adversely affect the flavor.

Q: Which truffles contain alcohol?
A: A number of our truffles do incorporate liqueurs or other alcohol products, although at levels that are low enough for safe and legal consumption by minors. Such chocolates include our Bailey’s Irish Cream Truffle, Champagne Truffle, Blackberry Brandy and Cherry Brandy Truffles, Amaretto Truffle, Grand Marnier Truffle, Raspberry Truffle, Black Russian Truffle and a small amount of coffee liquor in our coffe-flavored truffles.

Q: Are all of your truffles handmade?
A: Yes. All of our truffles are handcrafted, hand-decorated and hand-packaged.

Q: What allergen risks do your chocolates pose?
A: Our chocolates contain a number of ingredients that could pose allergen risks. Be advised that our chocolates are manufactured in a facility that handles peanuts, tree nuts (almonds, Brazil nuts, cashews, hazelnuts, pecans, pistachios, walnuts and macadamia nuts), milk, eggs, soybean & wheat products. If you have a severe nut allergy these products may not be safe as they share equipment with other nuts.

Q: Do you have any Kosher products?
A: No, we do not offer Kosher products.

Q: Do you have any vegan products?
A: No, we do not offer vegan products.

Q: Do you have any gluten-free products?
A: Yes. One item that we offer for our gluten-free clientele is our bittersweet chocolate. Little “ribbons” of bittersweet chocolate which is sold at $7.00 per pound. This chocolate is bagged in one-pound increments.

Q: Do you sell sugar-free chocolates?
A: Yes, please see our sugar-free page.

Q: Does your chocolate contain soy lecithin?
A: Yes, soy lecithin is an important all-natural emulsifier that keeps the cocoa and cocoa butter from separating in chocolate products.

Q: Do you offer gift cards?
A: Yes, currently gift cards can be purchased at store in Sacramento where the cards can also be redeemed. At this time, gift cards cannot be purchased or redeemed on our Web site, although we are working to add those capabilities.
